Ramadhan is a time for spiritual reflection, togetherness, and of course, delicious food. Among the many traditional dishes enjoyed during Iftar, Aubergine Pakoras stand out as a crispy, flavourful, and easy-to-make snack. These deep-fried delights are perfect for breaking your fast, served alongside fresh salad and a tangy chutney. Follow this simple recipe to prepare mouth-watering Aubergine Pakoras for your loved ones.

Ingredients:

  • 2 cups Besan (Gram Flour)

  • 1 teaspoon Salt

  • 1 teaspoon Turmeric

  • 1 teaspoon Dried Coriander Powder

  • 1/2 cup Water (add more if needed for consistency)

  • 1 Aubergine (sliced into thin discs)

  • Vegetable Oil (for deep frying)

Preparation Method:

  1. Prepare the Batter: In a mixing bowl, combine the gram flour, salt, turmeric, and dried coriander powder. Gradually add half a cup of water while stirring continuously to form a smooth, thick batter. Add more water if needed to achieve the right consistency – it should be thick enough to coat the aubergine slices evenly.

  2. Prepare the Aubergine: Wash the aubergine thoroughly and slice it into thin, even discs.

  3. Coat the Aubergine: Dip each aubergine slice into the batter, ensuring it is well-coated on both sides.

  4. Frying the Pakoras: Heat vegetable oil in a deep pan or fryer until it reaches a hot temperature (around 180°C). Carefully drop the batter-coated aubergine slices into the oil and fry until they turn golden brown. This should take approximately 3-4 minutes per batch.

  5. Drain and Serve: Remove the pakoras using a slotted spoon and place them on a paper towel to absorb excess oil. Serve hot with a side of fresh salad and your favourite chutney.

Serving Suggestions:

Aubergine Pakoras pair beautifully with mint chutney, tamarind sauce, or a yogurt-based dip. For an extra crunch, serve them with finely chopped onions and fresh coriander.
